Exciting new Wernher Restaurant appointments

We are delighted to announce the appointment of a new manager for our fine-dining Wernher Restaurant, following the start of the restaurants new Head Chef, Joe Walker, in the summer.

Jean-François Bisault joined us as Wernher Restaurant Manager from London’s Hotel Café Royal, where over five years he developed, launched and managed new restaurant concepts Papillon and Cakes & Bubbles with Albert Adria, Afternoon Tea at the Oscar Wilde Lounge, and most recently managing restaurant Laurent.

Describing himself as “passionate about delivering exceptional customer service standards”, Jean-François brings 20 years of experience to his new role at Luton Hoo, where he is responsible for managing the hotel’s two AA Rosette, 80-cover Wernher Restaurant. Jean-François Bisault said: “Luton Hoo is a very special place with its grounds, the Mansion House and its history, and the Wernher Restaurant is right at the heart of it. The team and I are committed to working on how we can make the guest journey more memorable, and my ultimate ambition is to increase the restaurant’s two AA Rosettes to three.”

Jean-François will be working in close partnership with recently appointed Head Chef Joe Walker. Former Acorn Award winner, Joe was appointed by Luton Hoo in August, having previously worked for Anglian Country Inns as Executive Chef of Hermitage Rd bar and restaurant in Hertfordshire.

Speaking after his appointment, Joe Walker said: "I'm so excited to be taking the helm at the Wernher Restaurant and looking forward to leading the team into this exciting new chapter. I love getting out into the community, seeing what's going on in the British food scene and using my training experience to help other young chefs find their way in our evolving industry.”

Matthew Long, General Manager at Luton Hoo, said: “The Wernher Restaurant is an incredibly special dining experience, and with Jean-François and Joe on board we will be able to take that to the next level. Both are talented and passionate professionals who will be great leaders to their hard-working teams”
